Our producer-owned meat company is opening a whole animal butcher shop in late March, 2016 and we're looking for multi-faceted foodies who are passionate about bringing healthy, locally sourced, grass fed and pastured meat to the hungry citizens of Milwaukee.

Job descriptions are somewhat flexible, depending on your interests, the skills you bring to the table, and your ability to learn and grow. Preference will be given to candidates who have the requisite skills to fill more than one of the following roles:

Butcher/Meat Manager

You will be working with/preparing primal cuts of premium meats, including beef, pork, lamb and chicken. Ideally, you have some experience cutting, trimming, tying, grinding, maintaining an attractive meat case, filling custom orders, and managing inventory.

More than a simple butcher, you will be our ambassador for healthy, humanely and sustainably raised, locally sourced meat. You should be able to teach our customers about our farmers and the animals they supply, show them the advantages (and limitations) of whole animal butchery, and inspire them to try unfamiliar cuts or new methods of preparation.

Further opportunities for aging, curing, smoking, sausage making and recipe development will be available to experienced candidates. Additional ongoing training and supervision will be provided by the Master Butcher.
