I am interested in taking butcher training in Europe. I am based in Canada and I know there are programs here but I am very keen to study in Europe. I interested in butchery generally with a specific focus on the value added production of meat such as sausage making, smoking and curing.

I have noticed in my searches that there are many short term (1 day - 2 week) courses offered in UK, Italy and France etc, however I am interested in pursuing a diploma in Butchery. One of the drawbacks is that I only speak English so I am not sure what my options are.

Can anyone out there recommend schools/programs in Europe that might fit the bill?
