-Where are you located? SF bay area
-What is your butchery experience, if any? No formal experience, but I have worked on a few ranches the last few years and have participated and facilitated in the slaughter and breaking down of animals. This includes sheep, goats, and rabbits. I have also tried my hand at home-curing a leg of prosciutto (it turned out kind of salty)
-Are you looking to stage/intern or be hired? Any/All of the above
-What are you most interested in learning?
*Cutting (meat cutting & butchery)
*Curing (value-added meat processing)

Aside from any butchering experience I have also worked on sustainable vegetable and fruit farms over the last few years. I have a passion for sustainable foods and the farm-to-table experience. I am a quick learner and a hard worker. Even if there isn't an opportunity out there yet, if anyone has any advice for a novice getting their foot in the door and joining the ranks I would love some advice!
